[STS Lunch Seminar] Meat Inspection at the USDA & Thinking With Institutions // Saul Halfon

With a focus on “how institutions think,” Saul Halfon (Virginia Tech STS) explores recent changes in meat inspection practices at the US Department of Agriculture. Over 20 years ago, the USDA shifted from traditional sensory inspection (i.e. does this look/smell like it is safe for consumption?) to risk- and audit-based processes. The consequences of this shift for systems of accountability, trust, worker safety, food safety, farm structure, animal welfare, and regulatory expertise are numerous.
